Baby Artichokes Blanched in Chardonnay
Hand-harvested at the peak of the Italian artichoke season, each baby artichoke is carefully trimmed by hand, leaving only the soft, meaty and tender centre.
The artichokes are gently blanched in Chardonnay and white wine vinegar with wild rosemary and sage, then jarred with peppercorns and bay leaves in premium Italian extra virgin olive oil.
Once the artichokes are gone, save the fragrant oil. It is delicious drizzled over salads, grilled vegetables, fish, pasta, roasted potatoes or fresh bread.
Red Garlic Scapes
A genuinely unusual Italian delicacy. Each garlic plant produces only one scape, making the harvest naturally small and short-lived.
The scapes are prepared farm-to-table using freshly harvested produce. A brief traditional bath in boiling water and vinegar preserves their natural sweetness, freshness and gentle garlicky bite.
Serve them as part of an antipasti spread, pair them with cheese and charcuterie, or add them to sandwiches, salads, grilled meats and fish.
Bianchetto Truffle Paste
Crafted from Bianchetto truffles foraged in the pinewoods of the Tuscan Maremma, this intensely savoury paste brings the earthy flavour of fresh truffle to the simplest dishes.
Spread it onto warm crostini, stir it through tagliatelle or risotto, or spoon a little over eggs, potatoes, grilled meat or melted cheese.
