Its cool, high vineyards make Nebbiolo of real elegance, and Casot is the Nada family's best.

The Nadas bought their Casot vineyard in 1900 and have bottled their own wine since 1964. The site covers around 3.5 hectares at about 350 metres, facing southwest, with vines planted between 1960 and 2012, and it is farmed organically. Enrico Nada ferments with native yeasts, gives the wine around 65 days on the skins, and ages it for two years in large oak before six months in bottle.

Rose petals, wild berries and a hint of leather lead to cherry, citrus peel and liquorice. The tannins are fine and the acidity keeps everything fresh, so it ages gracefully.

Keep a bottle open for the weekend roast and let the rest rest.
