- 500g minced beef
- 2 tablespoons grated Parmesan cheese
- 2 slices of bread, crusts removed and soaked in milk
- 2 garlic cloves, minced
- 1 egg, lightly beaten
- 2 tablespoons chopped fresh parsley
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1 large onion, diced
- 2 x 400g cans of chopped tomatoes
- 2 tablespoons tomato paste
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- Salt and pepper, to taste
Directions
In a large bowl, combine the minced beef, soaked bread, garlic, Parmesan cheese, egg, parsley, 1 teaspoon of salt, and 1/2 teaspoon of pepper. Mix until well combined.
Shape the mixture into 16 meatballs. In a large skillet, heat the olive oil over medium heat. Add the meatballs and cook until browned on all sides, about 8-10 minutes. Remove the meatballs from the skillet and reserve for later.
In the same skillet, add the diced onion and cook until softened, about 5 minutes.
Add the chopped tomatoes, tomato paste, dried basil, and dried oregano. Season with salt and pepper to taste.
Return the meatballs to the skillet and simmer in the tomato sauce for 25-30 minutes, or until the meatballs are cooked through.
Serve hot over spaghetti or jus on its own.
